Filtering And Filling

Even though the recipe I have been following for Milk Liqueur says to leave it for 10 days, and I'm only 7-8 days in,  I'm ready to filter as I want to give some of it as presents tomorrow.

After all my worries about it not working I'm still not convinced it will. Only about 1/5 of it seems to have curdled and the rest just looks like chocolate milk. But somehow as I begin straining it through different strainers, and then 3 times through coffee filters, the magic starts to happen and almost instantly what I am getting is a clear liquid.

A clear liquid which is subtly sweet with a lovely distinct taste of chocolate and lemon. Perfect for sipping!

In my haste to get it all done I'm sure I end up wasting a bit as I don't leave all the filters to drain etc and then leaving the rest to filter overnight uncovered means I seem to lose some due to evaporation, but I have enough for all the presents I want to give, and a little bottle for myself, so I'm happy.

I will definitely make this again and am already pondering what I can flavour it with.
