Chocolate Class

As I'm interested in food and how what we eat effects us, I spent this afternoon on a raw and sugar-free chocolate making course. The course was run by Liz Bygrave in North London and I learnt a lot and of course ended up eating far too much chocolate!

We played around with ingredients such as Xylitol, Agave Syrup, Lucuma, Mesquite and Cacao nibs. I'm now looking forward to being able to make chocolates to my own tastes i.e. less sweet than those in the shops and with lots of sea-salt. Salt and chocolate are surely the greatest food combination known to man?!?!

We finished the day with a trip to IKEA where we bought some moulds for our chocolates (star-fish a favourite choice) and then onto Stoke Newington for a Turkish meal with plenty of salty Halloumi cheese, salad and onions cooked in turnip juice to counteract all the chocolate.
