Cooking Canapes

It's almost a year since I last visited l'Atelier Des Chefs and the vouchers I received for Christmas are about to run out so it's time for me to panickedly take some cooking classes.

This afternoon's class is on making canapes and we cover miniature Yorkshire puddings with Chateaubriand and horseradish, Asian salmon tartare, Oriental duck pancakes with plum sauce and rum & raisin madeleines.

There were only 3 of us so we spent 2 hours chopping, peeling, frying, flipping, sweating and shredding before sitting down to enjoy our feast.

All the food tasted great and I would definitely make all of it again. Esepcially the madeleines. With the use of Greek yoghurt and ground almonds (plus the rum and raisins of course) these were exceptional. The almonds gave them a slightly crisp outer layer and the yoghurt kept them really moist.Now I just need to invest in a madeleine pan. You can get the recipe here.
