Deconstructing Drinks

I've been reading a great book called 'How's your drink' by Eric Felten which is full of history, anecdotes, advice and of course cocktail recipes.

One of them was for a 'Deconstructed Negroni' which I've been itching to try ever since I read it. Tonight was the night. Not having any Aperol I went with the standard negroni ingredient of Campari instead and with a bit of bitters, some grapefruit juice and an egg white I was soon whisking up a delicious bitter foam to top my drink.

The foam was fab but I should have gone with a standar Negroni as the drink too rather than just the gin and vermouth- far too sweet for my taste buds but I can see me making more foams in the future...
