Jam And Journeys

The ports are all open again so we made our way back home- unfortunately I have missed going to the Flame-off in Towcester so I hope everyone who went had fun.

On the way back to the ferry we stopped in at Tea Together in St Remy Au Bois.

This is a great, small jam-making operation and as soon as I got there I understood fully what I'd been told about making sure we arrived 1/2 an hour after they started production again that afternoon- the smell when we entered the building was amazing!

They were making marmalade and it was such a fresh, fruity smell you couldn't help but be drawn in.

They very kindly let us try a few flavours (we can absolutely recommend them all: Fig and rum, Apricot and angelica, Raspberry,  Lemon and orange marmalad, Rhubarb, lemon and angelica and a great one with elderberries in) we couldn't resist buying a few jars especially when I discovered the ones with ginger and Earl Grey in.

The jam Tea Together make is unlike any other jam I've tasted (and I love jam!). They only use 40% sugar (compared to around 60% in most other jams) and stop cooking the fruit earlier than other manufacturers.

Although it was sweet enough to eat, the over-riding taste was of fresh fruit rather than sugar. It's more like they just captured the essence (and large pieces) of fruit, fresh- if you like jam try and get hold of some.
